Resep Bitter Ballen

Bahan :

• 2 sdm mentega/margarin
• 1 batang daun bawang, iris halus
• 150 g tepung terigu
• 400 ml susu
• ½ sdt garam
• 1 sdt merica bubuk
• ½ sdt pala bubuk
• 250 g fillet dada ayam rebus, cincang agak halus
• 50 g keju Cheddar, parut

Adonan salut :

• 200 g tepung panir baru yang berbutir halus
• 2 butir telur, kocok rata
• Minyak untuk mengoreng

Cara Membuat:

1. Lelehkan mentega/margarine, tumis daun bawang hingga harum dan layu. Masukkan tepung terigu, aduk cepat dan rata hingga berbutir, tuangi susu, garam, merica, dan pala, aduk rata. Masukkan ayam dan keju Cheddar, aduk rata. Angkat, sambil aduk-aduk hingga adonan dingin.
2. Bentuk adonan menjadi bola-bola sebesar kelereng, celupkan ke dalam tepung panir – telur kocok – tepung panir. Timang-timang bitterballen untuk membuang sisa tepung panir. Diamkan selama 20 menit agar adonan salut menempel sempurna.
3. Goreng dalam minyak banyak dan panas di atas api besar hingga berwarna kuning kecoklatan. Angkat, tiriskan, sajikan.

Udang Bumbu Lada

 

Udang Bumbu Lada

Bahan:
500 g udang pancet besar
1 siung bawang putih, parut
1 sdt garam
1 sdm air jeruk nipis
minyak goreng
Saus Lada Hitam:
1 sdm minyak sayur
1 siung bawang putih, cincang halus
30 g bawang bombay, cincang
2 sdm saus tiram
1 sdm kecap asin
1 sdm kecap manis
2 sdt lada hitam, memarkan agak kasar
200 ml air
1 sdt tepung kanji, larutkan dengan sedikit air

Cara membuat:

• Gunting sungut udang, sayat punggungnya dengan pisau hingga agak terbuka.
• Lumuri dengan bawan putih, garam dan air jeruk nipis. Diamkan selama 30 menit.
• Goreng dalam minyak panas dan banyak hingga agak kering. Tiriskan.

Saus Lada Hitam:

• Tumis bawang putih dan bawang bombay hingga layu.
• Tambahkan bumbu lainnya dan air. Didihkan.
• Tuangi larutan tepung kanji, aduk hingga kental.
• Masukkan udang goreng, didihkan sebentar. Angkat.
• Sajikan hangat.
